Crispy Rice and Walnut Bites

Ingredients

  • 100 g boiled California Calrose rice
  • 1 egg
  • Parsley (finely chopped)
  • 30 g breadcrumbs
  • Spices (black pepper, salt) to taste
  • 15 g flour
  • 200 g California walnut
  • For the Topping:
  • 250 g yogurt
  • 3 g (1 clove) garlic
  • 15 ml (½) lemon juice
  • Salt to taste

Preparation

  • In a deep bowl, thoroughly mix the California Calrose rice, egg, parsley, breadcrumbs, flour, and spices until well combined.
  • Shape the mixture into walnut-sized balls.
  • Heat the oil well and fry the balls until golden brown.
  • In the same oil, lightly fry the California walnuts until aromatic and slightly golden.
  • Place the fried balls on a serving plate. In a separate bowl, mix the yogurt, crushed garlic, lemon juice, and salt to prepare the garlic yogurt sauce.
  • Add the garlic yogurt sauce to the center of the plate and garnish with the roasted California walnuts before serving.
