Crispy Rice and Walnut Bites

Ingredients
- 100 g boiled California Calrose rice
- 1 egg
- Parsley (finely chopped)
- 30 g breadcrumbs
- Spices (black pepper, salt) to taste
- 15 g flour
- 200 g California walnut
- For the Topping:
- 250 g yogurt
- 3 g (1 clove) garlic
- 15 ml (½) lemon juice
- Salt to taste
Preparation
- In a deep bowl, thoroughly mix the California Calrose rice, egg, parsley, breadcrumbs, flour, and spices until well combined.
- Shape the mixture into walnut-sized balls.
- Heat the oil well and fry the balls until golden brown.
- In the same oil, lightly fry the California walnuts until aromatic and slightly golden.
- Place the fried balls on a serving plate. In a separate bowl, mix the yogurt, crushed garlic, lemon juice, and salt to prepare the garlic yogurt sauce.
- Add the garlic yogurt sauce to the center of the plate and garnish with the roasted California walnuts before serving.
