Antioxidant Walnut Rice Bomb

Ingredients
- 190 g California Calrose rice
- 100 g boiled beet
- 6 g (2 cloves) garlic
- 15 g olive oil
- 360 ml hot water
- 50 g coarsely crushed California walnut
- Lemon zest (optional)
- Spices (Salt, Black pepper) to taste
Preparation
- Soak the California Calrose rice in lukewarm water for 15 minutes, then wash and drain.
- Sauté the California Calrose rice in olive oil for 2–3 minutes.
- Add the beet juice to the rice and stir.
- Add spices and cook on low heat.
- Cook on low heat for approximately 12–15 minutes until the water is almost completely absorbed. Add the California walnuts during the last 3–4 minutes of cooking.
- Rest for 5 minutes and serve.
