Antioxidant Walnut Rice Bomb

Ingredients

  • 190 g California Calrose rice
  • 100 g boiled beet
  • 6 g (2 cloves) garlic
  • 15 g olive oil
  • 360 ml hot water
  • 50 g coarsely crushed California walnut
  • Lemon zest (optional)
  • Spices (Salt, Black pepper) to taste

Preparation

  • Soak the California Calrose rice in lukewarm water for 15 minutes, then wash and drain.
  • Sauté the California Calrose rice in olive oil for 2–3 minutes.
  • Add the beet juice to the rice and stir.
  • Add spices and cook on low heat.
  • Cook on low heat for approximately 12–15 minutes until the water is almost completely absorbed. Add the California walnuts during the last 3–4 minutes of cooking.
  • Rest for 5 minutes and serve.
