Walnut Rice with Onion Crown

Ingredients

  • For the Rice
  • 45 g butter and olive oil
  • 150 g ground beef
  • 1 onion
  • 380 g California Calrose rice
  • Hot water
  • Spices (Salt, Black pepper, Cinnamon, Cumin, Turmeric) to taste
  • For the Topping
  • 30 g olive oil
  • 1 onion
  • 50 g raisins
  • 3–4 dried dates
  • 100 g coarsely crushed California walnut

Preparation

  • Sauté the ground beef in butter and olive oil over medium heat for 6–8 minutes until it releases and absorbs its juices.
  • In a separate pot, sauté the thinly sliced (piyaz-style) onions in olive oil for 4–5 minutes until lightly pink.
  • Add the onions and spices to the sautéed ground beef and sauté together for another 2–3 minutes.
  • Add the washed and drained California Calrose rice over the ground beef and sauté lightly for 2–3 minutes. Add enough hot water to cover it. Cook with the lid closed on low heat for 12–15 minutes until the water is absorbed.
  • Add the dried dates, raisins, and California walnut to the other pot with onions; sauté together for 2–3 minutes.
  • Place the onion-California walnut mixture into a wide bowl first, then place the rice on top.
  • After removing from the heat, let it rest for 10 minutes, then serve by turning it upside down onto a serving plate.
