Rice and Walnut Date Pudding

Ingredients

  • 1 L milk
  • 75 g California Calrose rice
  • 100 g dates
  • 1 packet vanillin
  • 150 g finely ground California walnut
  • For the top: Coarsely crushed California walnut

Preparation

  • Add the milk, California Calrose rice, dates, vanillin, and California walnut to the pot. Leave to boil over medium heat.
  • After boiling, cook on low heat for 15–18 minutes until the California Calrose rice is completely soft and the mixture thickens slightly.
  • After removing from the heat, pass it through a blender while hot. Distribute into bowls. Let them sit at room temperature for 20–30 minutes, then cool in the refrigerator for at least 1–2 hours.
  • Before serving, garnish by sprinkling plenty of California walnut on top.
