Ingredients
- 1/4 cup honey
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 1/2 teaspoon lemon extract
- 1 1/2 cups rolled oats (old-fashioned)
- Finely grated zest of 1/2 lemon
- 3/4 cup very coarsely broken California walnuts
- 1/2 cup dried berry blend or a mixture of dried cherries, berries, or plums
Preparation
- Preheat oven to 300°F.
- Melt honey, butter, brown sugar, and lemon extract together in a medium saucepan.
- Stir in oats, walnuts, and lemon zest.
- Transfer mixture to a parchment-lined baking sheet, spread into a 1-inch thick layer, and press lightly to compress.
- Bake for 30 minutes or until granola is golden brown.
- Remove from oven and turn oven off.
- Stir the granola, press into a compact 1-inch layer again, and return to the warm oven for 10 minutes.
- Let cool completely, then break into pieces.
- Stir in dried fruit.
- Store in an airtight container.
