Ingredients

  • 1/4 cup honey
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon lemon extract
  • 1 1/2 cups rolled oats (old-fashioned)
  • Finely grated zest of 1/2 lemon
  • 3/4 cup very coarsely broken California walnuts
  • 1/2 cup dried berry blend or a mixture of dried cherries, berries, or plums

Preparation

  • Preheat oven to 300°F.
  • Melt honey, butter, brown sugar, and lemon extract together in a medium saucepan.
  • Stir in oats, walnuts, and lemon zest.
  • Transfer mixture to a parchment-lined baking sheet, spread into a 1-inch thick layer, and press lightly to compress.
  • Bake for 30 minutes or until granola is golden brown.
  • Remove from oven and turn oven off.
  • Stir the granola, press into a compact 1-inch layer again, and return to the warm oven for 10 minutes.
  • Let cool completely, then break into pieces.
  • Stir in dried fruit.
  • Store in an airtight container.
