Dairy-Free Vanilla Walnut Whipped Cream

Whipped Walnut Cream

Ingredients

  • 2 1/2 cups California walnuts, divided
  • 1 cup water
  • 3 tablespoons powdered sugar
  • 1–2 teaspoons honey, divided
  • 1 teaspoon vanilla extract
  • A pinch of salt

Preparation

  • Purée 2 cups of walnuts with the water in a blender for about 2 minutes, until very light and fluffy.
  • Add powdered sugar, 1 teaspoon of honey, vanilla extract, and salt, then blend for about 30 seconds.
  • Add the second teaspoon of honey if a sweeter flavor is desired.
  • For a thicker whipped cream consistency, blend in the remaining 1/2 cup of walnuts.
  • Continue blending until the mixture is light and fluffy.
